Here’s what will be hiding at the back of your fridge on Boxing Day if you’re an Australian:
- Half-drunk assorted bottles of champagne and sauvignon blanc
- Cheese and nibbly things
Here are two awesome, non-traditional, and mouth-wateringly-delicious ways to use all of them.
Bake or fry up the heads and shells with onion, star anise, ham fat and some Frenchy herbs and spices. Cook off the leftover wine once you’re done. Add in the leftover pavlova cream. Use up any leftover prawn meat. Here’s a pretty good lobster bisque recipe to follow. You’ll get the idea.
Turkey, brie and cranberry pizza
You could make ham pizza of course, but that’s a bit boring. You can have ham pizza any day of the week. Shred that turkey, make the base yourself, and layer on leftover brie and the rest of the cranberry sauce that’s otherwise going to sit in the bottom of the fridge door until next Christmas.
